Mild and milky, smooth and silky: any way you stretch it, we love fresh mozzarella! The EP team headed to Murray’s Cheese in the East Village, for a hands on experience in the preparation of this traditional Italian pasta filata (pulled cured) cheese. We first learned about the history, sources and the various production processes of this delicious cheese. Then it was time to roll up our sleeves, mixing and stretching the curds until the right texture and consistency was achieved – finally molding it into the signature shape of mozzarella!
It was an educational and tasty experience for the group. Added bonus; bringing our mozzarella masterpieces home!
